Hanbeifu Fu Shop
"Fu" is a food made from wheat gluten. Raw fu (nama-fu) is an important ingredient in Shojin-ryori, the Buddhist vegetarian cuisine of Japan where it is used as a substitute for meat.
Hanbeifu is one of only a few fu specialty shops in Kyoto selling a variety of fu, both raw and dried, as well as yuba (tofu skin). The family-owned shop's history goes all the way back to 1689, now being operated by the 11th generation of the family. The store also offers fu and yuba cuisine for lunch strictly on reservation basis.
